      Why choose the potassium phosphate over the sodium equivalent?

In fermentation media sodium loading has to be controlled for the same reason. The potassium salt does the identical chemical job while supplying a nutrient rather than a contaminant.

      Why is DKP so hygroscopic?

      Potassium phosphates are strongly deliquescent, meaning they absorb enough atmospheric moisture to dissolve in it. Bags left open will cake and eventually liquefy, and the material loses assay as it takes up water. It should be stored sealed in a dry area and part-used packaging resealed immediately.

      How is DKP used in fermentation?

      Around 9, mildly alkaline. That makes it the base component of a potassium phosphate buffer system, paired with the acidic MKP at pH 4.5. Blending the two in different ratios sets the working pH anywhere between those points, which is how biological and process systems are held stable.
