      What is oleogelation and why does rice bran wax do it well?

      Oleogelation is turning a liquid oil into a self-supporting gel without water or hydrogenation. Rice bran wax crystallises into long, fine needles that form a three-dimensional network through the oil, trapping it. Because those needles are long and thin, very little wax is needed to build a continuous network, and additions of only 2 to 4 percent will gel an oil into a firm structure.

      Where does rice bran wax come from?

      It is separated from crude rice bran oil during winterisation and dewaxing, the stage at which the oil is chilled so its high-melting components crystallise out and can be filtered off. It is therefore a co-product of rice bran oil refining rather than a crop grown for wax, which supports both its cost position and its sustainability positioning.

      How does rice bran wax compare with carnauba?

      Rice bran wax melts at 77 to 82 degrees Celsius, somewhat below carnauba's 82 to 86, and is slightly less hard. It gives good gloss and a smoother, less draggy skin feel than carnauba at comparable firmness, and it is a considerably more efficient oleogelator. Where maximum hardness and shine are the objective, carnauba remains the stronger choice.

      Is rice bran wax used in food?

      Yes. Its ability to structure liquid oils without hydrogenation makes it a route to solid and semi-solid fats free of trans fatty acids, which is of real interest in bakery and confectionery. Food applications require the appropriate grade and documentation, so the intended use should be stated at enquiry.
