    Cocoa Butter Substitute, or CBS, is a category of structured vegetable fat developed to provide a selected melting and crystallisation profile. Many conventional CBS materials are lauric fats based on palm-kernel feedstocks. CBS identifies a functional fat category rather than one pure chemical, so the source oils and modification route must be established for the offered product. It is chemically distinct from cocoa butter and must not inherit cocoa butter's ingredient identity or formulation claims. Its triglyceride distribution determines solid-fat behaviour, compatibility and the way a blend sets after heating.
